Cream of Broccoli Soup

This is an easy and satisfying soup. I love to have a cup of soup before dinner as a way to add an extra vegetable and get in all the nutrients from bone broth.

Serves 4
Prep time: 10 minutes
Cooking time: 30 minutes

Ingredients

4 Tablespoons butter

1 ½ cups chopped celery

1 cup coarsely chopped onions

1 ½ pounds broccoli, trimmed and chopped

¼ cup flour

4 cups bone broth

Kosher salt

Fresh ground black pepper

Directions

  1. Melt butter in a soup pot over medium heat.

  2. Add celery and onion and cook, stirring, until tender but not browned.

  3. Stir in broccoli.  Cover and cook about 5 minutes.

  4. Stir in flour.  Turn the heat to high.

  5. Slowly stir in bone broth and bring to a boil.

  6. Reduce heat to medium low and simmer, partially covered, until the broccoli is tender, about 20 minutes, stirring occasionally.

  7. Use an immersion blender or food processor to process until smooth.

  8. Season with salt and pepper to taste.

  9. Serve

 Make it your own

Substitute your favorite veggie or chicken stock for the bone broth

You can add ½ cup cream, coconut milk, or milk, if desired.

Garnish with cheese.

Use cauliflower or asparagus to make a different version of the soup (omit the broccoli).
